Crazy Easy Spam Fried Rice

If this recipe is called cheating, I don't care! This recipes will feed 6 and keep everyone wanting to come back for more!

  • 2 Large Orders of Fried Rice from Panda Express
  • 6 Eggs
  • 6 Tbs Of Salted Butter
  • abt 3 Tbs of Soy Sauce
  • 1 can Spam

Cube Spam into tiny 1/4" cubes and fry on high until brown and crisp and set aside. Scramble eggs (in non-stick pan with no added oils or butter) and chop so there is no large chunks; set aside. Now, in a HOT (high or slightly below) large pan melt butter tell hot. Dump in all the rice and start frying slowly stir in soy sauce; stirring and flipping constantly. After abt 2 min dump in Spam and eggs, mixing well. Once it's mixed well, fry for abt  3 more min allowing a bit more time for the rice to fry between stirring, but don't neglect stirring and flipping. Walla! Enjoy!!!!

Island Apple Coleslaw

There's no cheating here except how much you may eat of it!

  • 4 Large Apples (ETL uses 2 sweet Fujis and 2 sour Grannies)
  • 2 Large Peeled and Grated Carrots
  • 1/4 cup Cider Vinegar
  • 1 cup Mayonnaise
  • 1/3 cup Honey
  • 2 tsp Kosher Salt
  • 1 tsp Ground Black Pepper

In a large bowl combine a mix your dressing (everything but the apples and carrots). NOW use an apple corer peeler slicer (important Google it) on all 4 apples then cut into abt 1 inch pieces. Put your apples and carrots into the large bowl with the dressing mix and Enjoy!!!!

Luau Pork Marinade & Dipp'n Sauce

  • 6 oz Orange Juice
  • 2 oz Lemon Juice
  • 1 tbs Oregano
  • 1 tbs Bay Leaves
  • 1 Garlic Bulb
  • 1 tsp Cumin
  • 4 tsp salt
  • 4 oz  water
  • 4 oz Pineapple Juice

Peel and mash the garlic cloves. Mix all the ingredients and let it sit for a minimum of one hour (shoot for 3 hours).

If you're marinading multiply the above recipe by 2 or 3, this will give you enough to marinate the meat and to keep extra to use as a dipping sauce. If you were marinating then cooking pork add and mix the dripping of the pork to the luau pork marinade for added flavor!!! Now pour over your cooked pork or dip it and Enjoy!!!
